On to the Bread Baker's Apprentice Challenge!

Since I have started baking Italian bread loaves for my mother (Due to Wegman's not selling a white flour Italian bread anymore), I've decided to delve further in to the pages of The Bread Baker's Apprentice, by Peter Reinhart.

Bread by bread, starting at the beginning.  Just out of memory, I've made the Italian Bread, the Pain de Campagne, the Kaiser Rolls, and the recipe for crackers.
