Salmon and fresh croutons

Sorry for the lack of a post on our last batch of CSA goodies.  I was out of town and a neighbor picked them up for us.  But we got more lettuces, spinach, beets, and red onions!

In an effort to make the salads more interesting, I made some croutons.

1/2 loaf of a French bread (Batard, torn into little crouton like bits)
some fresh oregano and parsley
some dried parsley, as it just isn't growing this year
onion powder
salt & pepper
and
a nice drizzling of olive oil.

Mix all that up.  Hands work great for this!  Place on a tray into a 350 degree oven.  I cooked them 10 minutes, stirred.  10 minutes more.  Stirred.  Then for 6 minutes.  Who the heck are these people that say they are done in only 12 minutes or something?!!  As you can see from the photo, they came out pretty happy:



On to the salmon.  A dish I've done before, mainly because it hasn't failed me yet.  I do twist it up a bit though.  This time, by adding some fresh spinach.

I really wanted to use my preserved lemons with this, but I think they need another week until they are to my liking.

This used up 1 of the onions ( I discarded the tops though. I should have used them, or dehydrated them).  I'm too tired to go into details, but email me if you want the specifics!  This was covered while cooking!

Why the spinach discolored a bit, I have no idea!
