Steak with Beets and Baby Greens
Yes, believe it or not, the beets kept for this long. Ok,...one didn't. it was a ball of mush and quickly sent to the compost pile. They were seasoned along with the greens (from the Aerogarden) in balsamic vinegar and olive oil, with a dash of salt and pepper.
The steaks were from Organic Prairie . They were done using Alton Brown's method. Preheat the oven, along with a cast iron pan, at 500 degrees. Season the steaks with a little oil, salt and pepper. Transfer the pan to a burner set to high. Sear each side of the steak for 30 seconds, and move into the oven. cook for about 3 minutes, flip, and cook for another 3 minutes. Done. Remove from pan and let rest under tin foil for about 5 minutes. That's it. Time in the oven will depend on how well you like your steak cooked, the thickness of the cut, and also whether it's room temperature or not.
