The Great Homemade Sauerkaut Experiment

This is probably shorter on photos that you would want, but 1) I forgot and 2) there really wasn't much to show!

Being overwhelmed with cabbage, I had to do something with it before it got too old.  This is one concern of mine...that 2 of the heads were starting to dry out.  Hopefully, there is enough moisture in them for the salt to draw out.  I purchased a sauerkraut maker from therawdiet.com.  I could have just used a bucket and a water-filled bag or something, but with a plethora or pets, that's not a good idea.

I used 3 heads of purple cabbage, and 1 head of the savoy cabbage that I had left.  This was just enough to cram the shredded bits into the glass container.  3 Tablespoons of pickling salt were added.  I hope this enough!  We'll find out soon enough I suppose. I'll be sure to keep you posted.

Purple Cabbage
Carrots
