Alaskan Halibut with Delicata Squash and Spinach Salad
Now this was a great meal. I don't know if the culinary experts will scorn at serving halibut with a sweet spinach salad dressing, but if they do they are wrong.
Step 1, get the squash going.
1 Delicata Squash.
1 tsp butter
salt, pepper
Bake the squash in a 350 oven for about 25 minutes upside down. Tin foil is your friend. Flip, and bake another 15 or so, depending on size. Let cool a bit, scrape out the innards, stir in the butter, and season with salt and pepper. Done.
Step 2, the spinach salad.
1 Bunch spinach (of course)
For the dressing I went to my old standby for this. It's never failed me. Nancy's Spinach Salad. Courtesy of the Food Network. I skip all of the eggs, mushrooms..etc and just use the basic dressing. Personal decision based on my mood.
Step 3, the halibut.
First, I put some kale into a hot pan with oil, 1 clove of smashed garlic, and a splash of lemon juice. Added about 1/2 cup water and covered for 5 minutes. Probably overkill as I then add the halibut on top of this.
The halibut was coated lightly in olive oil and seasoned with salt and pepper. Cooked covered on top of the kale for 6 minutes, flipped and cooked again for about 2. I finished it off under the broiler (here, using oven-safe pans really comes in handy). The end result:
