Moroccan seasoned zucchini and yellow squash
Again , trying to use up our bounty. For this recipe we had a tag along dish of Zatarain's Black Beans & Rice which somehow really complemented the meal. Mixed together it really worked. Don't as me how.
1 Zucchini
2 Small Yellow Squash
1 Clove Garlic, minced
(the rest are all just "winged")
Ground Cumin
Ground Ginger
Ras el Hanout (which is a Moroccan spice blend that I mixed together last year. NO idea what was in it, but I could defitinely smell cloves)
Ground Cinnamon
Salt & Pepper
Olive Oil
I sauteed the garlic in the olive oil for about a minute.
In went the slices of zucchini and yellow squash.
Dusted it all with the spices, and stirred/flipped.
Covered over medium/low heat stirring occasionally until soft.

It came out much better than I expected and made for a nice twist on our squash consumption!
