Baked Macaroni and Eggplant

Another recipe from my Cucina di Calabria cookbook...Timballo di Maccheroni e Melanzane.  This recipe used both eggplants we recieved, 1 onion, and 1 pepper.   Proud to use up those eggplants.  The sauce was a quick homemade sauce.  The eggplants were sliced to about 1/4 inch, brushed with olive oil,  and broiled for 10 minutes before going into the layers of sauce, pasta, and cheeses.  45 minutes of baking and it's dinner time!
