A nice tomato & pepper spread

What to do when you're short on time, but have to start using up some of your CSA veggies?  How about a quick spread on little Wegmans brand Rosemary and Sage Bruschette Toasts?

The main meal is a Bertolli dinner (which we love), but we had to do something with these veggies. 

Food processor time!



1 Red Carmen Pepper
1 Large tomato
4 Small Basil Leaves
1 Clove Garlic
Olive Oil  (I used some regular and some extra virgin in this)
Salt
Pepper

That was it.  I processed everything but the tomato, knowing that I wanted it a bit chunky, and the pepper would need a bit more than the tomato.  When all was said and done, Elizabeth ate almost all of it before the main course. I think I need to work on my timing a bit!

    They were on sale too!  Of course,  spending money for dried out bread that they don't sell (I'm assuming) usually isn't cost effective   Then again, it beats buying the bread, slicing it up nice and even, seasoning it, and baking it!
