Sea Bass and Leeks

Back to the yummy Chilean Sea Bass and this time using up some of our leeks, broccoli, and tomatoes.

This came out great, and was pretty much all improvised.

First step was to wash and cut up the leeks, saute them with some butter, olive oil, garlic, and salt & pepper.  Then....hmmm...what do we have on hand.  Ah, vegetable broth.  I figured we already had vegetables going, so why not.  It shouldn't interfere with the taste of the fish.  Step 2.  Remembering I had to use broccoli.  For that, I took a giant plastic measuring cup, boiled some water in it in the microwave, added some broccoli florets, and cooked for about 2 minutes.  Why, I have no idea, because I ended up putting it into the pan with the fish.  So back to my story, see?  I added about a cup of the broth and let the leeks cook a bit more.  In then went the fish and the broccoli.  Covered it up and let it cook for about 6 minutes.  What actually happened was, I was watching that High School Musical reality show and lost track of time.  I think it was 6 minutes.  Wait!!! We have tomato berries to use up!  In they went for about a minute.  Done.  Voila!  I just wish I added another bunch of leeks.  They were really good
