Bruschetta
It started out innocently enough. Watching the Buffalo Bills home opener on tv. Why not bake some bread? Not the 2 day home-baked method, but some bread machine "French bread". It ended innocently too, with simple ingredients of ripe organic tomatoes, homegrown herbs, quality extra virgin olive oil, plump garlic, and salt, gently stirred to combine. The broiler was all I needed from there on, to toast the bread to a golden hue and finish with a drizzle of the olive oil and a dabble of mozzarella. Satisfying after a hard days work of watching football.
