Elizabeth cooks

For tonight, Elizabeth took the reins, like Gene Autry stopping a runaway stage coach.  She went with the recipe supplied by our Porter Farms newsletter, Corkscrew and Tomato Salad with the small addition of cut up chunks of a soft Swiss cheese.   I think that was a brilliant idea and really contributed to the dish.  She refused to have the photo of her cooking, so we'll have to just settle for the completed dish (which wouldn't be complete without a giant bottle of Diet Coke in the background).
 
Let's all give her a round of applause, shall we?
