Baked Halibut with a Zucchini / breadcrumb topping

Trying to use up more zucchinis, and this is a way we were able to use one.  This is a variation of one of my favorite halibut recipes and it surprisingly worked out great!

  • 2 Alaskan Halibut filets
  • 1/3 cup breadcrumbs + some for the bottom of pan
  • 1 small zucchini
  • 1/2 stick Butter
  • Old Bay Seasoning
  • Salt
  • Pepper
  1. Thaw halibut if frozen
  2. Preheat oven to 450 degrees
  3. Shred 1 small zucchini in food processor
  4. Melt the butter and pour about 1/2 in the bottom of an ovenproof pan or dish with a very slight dusting of breadcrumbs.
  5. Mix the rest of the breadcrumbs with the shredded zucchini
  6. Place halibut in pan
  7. Top with the breadcrumb mixture
  8. season with salt, pepper, and a few sprinkles of Old Bay Seasoning
  9. Pour the rest of the butter over the fish
  10. Bake in a 450 oven for about 10 minutes. More for thicker pieces.
  11. Remove from oven and serve.
  12. If desired, you can place under a broiler for a minute to crust up the topping a bit, but be careful not to overcook the fish
